Organics are lifeforms based on organic biology, rather than synthetic biology. Every species that is not synthetic is typically referred to as organic.
The Outer Rim contains hundreds of sapient, organic species, with each of them being a functional part of society. Organic species can come in many varieties. Some of them covered in fur, others in scales or smooth skin. Some are bipedal, others have snake-like appenages, or are quadrupedal.
Organics are your friends despite the strange, squishy food they eat.
